Ever since I was a kid (then with my dad, now with my own kids), I buy my cheese at the market stall of the Veldhuijzen family. It is located on the southeastern end of the weekly Saturday market, where the Vredenburg square touches the Lange Elisabethstraat. The stall has been there for more than 35 years, as I first used to go there as a toddler and am now running up to 40.
The amount of cheeses they have on offer is simply endless, with mostly local cheeses from regional producers, and the prices are the cheapest you can find anywhere. Sampling the cheese before you buy is standard, and they cut the cheese right under your nose with huge traditional cutting tools.
Make sure to come early in the morning or late in the afternoon, as the stall is probably the most popular in the whole market, and the queue can be endless. Waiting for half an hour is not rare. By the way, they also have a stall in Vleuten on Friday!
