Not really a hidden gem, but definitely a recommendation from my side is to go canoeing in the canals. That is, if the weather allows it because canoeing in the rain is not fun. Is it a bit touristy? Yes, for sure. But some touristy activities are popular for a good reason! Besides, if the weather is good, you'll find many locals going for a paddle, too.
From the canals, you'll see the city from a new perspective, discovering places that are not obvious when you're walking around. If you have the time, I'd recommend to rent a canoe for four hours (instead of 1.5-2 hours). This way, you can stop and get out when you see a nice spot and have a picnic. The best route is the ‘Minstroom’ route, which takes you through both the center and a network of tiny canals on the east side of the city. You'll see beautiful hidden gardens that many locals don't even know about! However, this is a relatively long route, so if you prefer a shorter route, you can stick to the city center.
Bring sunscreen if it's sunny! Also, wear clothes that can get wet. Definitely book ahead if you can! When the weather is good, slots tend to fill up quickly. The Sup- en Kanoverhuur on the Paardenveld is a good place to rent them, but if they're booked out, you can also check Kanoverhuur Utrecht on the Oudegracht.
